My Twist on Stuffed Shells

I came up with this recipe a few weeks ago and it’s been a huge hit in our house!

Sarah’s Stuffed Shells

3 boneless skinless chicken breasts
1 box of pasta shells boiled
1 – 28 oz can of crushed tomatoes
1 large onion
1 large zucchini
2 cloves garlic
1 cup mozzarella
1/2 cup parmesan cheese+2tbsp
2 tsp oregano
olive oil
salt to taste

Preheat oven to 400 degrees
Cut chicken and zucchini into chunks. Cook with olive oil and minced garlic until chicken is cooked through. Put mixture into a food processor until well chopped. Mix in 1/2 of the mozzarella and 1/2 cup of parmesan cheese. Season with salt.

Saute onion until translucent and add crushed tomatoes. Mix in oregano, 2 tbsp parmesan, and salt.

Spread a thin layer of sauce in baking pan. Stuff shells, place in baking pan, and then pour sauce over top. Sprinkle the remaining mozzarella over top and bake for 30 minutes.

We had rain all day but it did let up for about 45 minutes midday and the sun came out. Lily and decided to get a quick walk in and I took some pictures. Here are a few of the shots I got:

This started out as one thing and ended up being something totally different! All I had to do was crochet a circle and then stitch it together and then closed…easy peasy!
